Dragons aren't exactly prominent... Kilgharrah is actually the "last" dragon because Uther (our beloved ASH, he does villains so good!) had them all slaughtered. He kept Kilgharrah chained underneath Camelot but Merlin heard its voice because he's the last Dragonlord (they were also slaughtered by Uther).
Kilgharrah appears quite often in S1 from what I remember, but once Merlin frees him, he only returns on occasions when Merlins calls him for help.
Aithusa appears a few times in later seasons.

I enjoyed him very much as Uther, but perhaps my deep "unlove" for Giles in S6/7 helped me feel like he wasn’t really tarnished through Uther. Unfortunately BtVS had already done that for me years earlier.
You could probably try some episodes of later seasons (4x04 and forward, avoiding 5x03 where Uther returns as a vicious ghost) although the dragon doesn’t appear very often at that point. ;)
