Fight: Guardian: menu: to end an argument

Title: to end an argument

Author's note: this is the menu for the meal Shen Wei cooks for Zhao Yunlan in my story hasty. (He says: "Food is a good way to end an argument.")


Main menu:

Plain white rice
Shanghai wonton soup
Cantonese poached ginger chicken
Tea-infused quail eggs
Choy sum with sizzling oil
White sugar sponge cake

Menu notes:

For purposes of the story, I relate Dragon City with Shanghai, but assume that Dixing cuisine is most similar to Cantonese cooking. (Cantonese food has relatively little hot pepper, but there is plenty of spicy ginger, cinnamon, and star anise.)

This entire menu can be made without an oven, and can be put together in about an hour, assuming some prep work was done ahead of time. It can be eaten cold or warm, and can be re-heated without losing much flavor or texture. (The greens will be a bit more wilted if they're microwaved, but they'll survive.)

- Boil the quail eggs ahead of time. You can either make the tea eggs with the rest of the food, or make them that morning and let them sit in the liquid in the refrigerator to deepen the flavor and color.
- The sponge cake batter needs to be started earlier in the day, preferably left in the slow-cooker to ferment. Or the entire sponge cake can be made the day before and stored in the refrigerator.
- Reserve the chicken stock from the poached chicken for the wonton soup.
- Lightly cook the wontons, then take them out of the broth and package them separately so they don't get soggy.
